The restaurant agrees to prepare the 2 dishes for a scheduled photography session. The executive chef agrees to a professional portrait taken at the restaurant (Previous BOS chefs will use their existing portrait). The executive chef agrees to be taped for a video clip talking about their restaurant and dishes in the promotion. The executive chef agrees to submit a quote on working with PEI seafood and a short biography. (Previous BOS chefs will use their existing quotes and bios unless they want to make updates or changes). The restaurant and executive chef agrees to participate in the judging component by preparing and presenting 3 of each dish to the professional judging panel at Canada’s Smartest Kitchen. The restaurant agrees to offer the 2 dishes on the menu during the full promotion period of June 1 to June 30, 2018. The restaurant agrees to keep sales data on the 2 dishes during the promotional period which will be submitted to the Department of Agriculture and Fisheries for promotion evaluation. (Previous participating restaurants who have not submitted their data will be required to do so before being accepted to participate in the 2018 promotion).
