I try and take time off every summer to go Halibut fishing, Tuna fishing actually anything that deals with a boat I love to be involved in. PEI has some of the best Seafood known all over the world it’s great to be able to take advantage of that and use these ingredients on a regular basis.”

Having thrived under Chef Patrick Young at the Dundee Arms, and Chef Dana Wood at the acclaimed Inn at Bay of Fortune, Leslie Flynn has become a leading proponent of the farm to table movement sweeping Atlantic Canada. At home, the Red Seal chef loves nothing more than cooking trout he catches himself. At work, that love translates into a pursuit of fresh, local produce and seafood, whenever, wherever possible.
